Condition Grading System (1-5): Since these are vintage and pre owned knives, they carry a history of being used in Japanese kitchens. We grade our knives on a 1-5 scale:

  • Grade 5 (Excellent): Very fine condition. Nothing needs to be done, it is ready to use.

  • Grade 4 (Very Good): Works excellently and nothing needs to be replaced. May show minor cosmetic flaws, and a light sharpening wouldn't hurt.

  • Grade 3 (Good): Needs to be sharpened. Small chips in the blade may occur, rust and cosmetic flaws can be present to a greater extent.

  • Grade 2 (Fair / Needs TLC): Needs more than just a quick touch up sharpening. This knife requires more work and love. Please make sure to look closely at the pictures.

  • Grade 1 (Restoration Project): Major flaws are present. Requires significant work, for example, a complete handle replacement. Please make sure to look closely at the pictures.
