Condition Grading System (1-5): Since these are vintage and pre owned knives, they carry a history of being used in Japanese kitchens. We grade our knives on a 1-5 scale:

Grade 5 (Excellent): Very fine condition. Nothing needs to be done, it is ready to use.

Grade 4 (Very Good): Works excellently and nothing needs to be replaced. May show minor cosmetic flaws, and a light sharpening wouldn't hurt.
