Haiku Original

The art of sword forging is an old Japanese tradition. Today CHROMA HAIKU knives are produced in small Japanese knife factories, using only the most highest quality steels.
CHROMA HAIKU knives are extremely sharp and hold their sharpness for longer than most knives.

• The Haiku sashimi knife is made of molybdenum vanadium steel, with an HRC hardness of 58 +/- 1.
• The handle is made of treated Honoki wood

CHROMA HAIKU knives are used by the winners of Bocuse d’or Mr. Serge Viera (2005) and Mr. Fabrice Desvignes (2007)

• Condition Grade: 5 (Overall very very good condition)

• Blade / total length: 210 / 355 mm

• Weight : Approximately 110-120 g (Each is hand made)

• Grind: Single bevel

Condition Grading System (1-5): Since these are vintage and pre owned knives, they carry a history of being used in Japanese kitchens. We grade our knives on a 1-5 scale:

• Grade 5 (Excellent): Very fine condition. Nothing needs to be done, it is ready to use.

• Grade 4 (Very Good): Works excellently and nothing needs to be replaced. May show minor cosmetic flaws, and a light sharpening wouldn't hurt.

• Grade 3 (Good): Needs to be sharpened. Small chips in the blade may occur, rust and cosmetic flaws can be present to a greater extent.

• Grade 2 (Fair / Needs TLC): Needs more than just a quick touch up sharpening. This knife requires more work and love. Please make sure to look closely at the pictures.

• Grade 1 (Restoration Project): Major flaws are present. Requires significant work, for example, a complete handle replacement. Please make sure to look closely at the pictures.
